What size team should we have?

"In the Civil War, (or any pre automibile time period) teams were generally four or larger. A farmer might work a single span (two horses or mules) or yoke (two oxen), for most purposes, teams were four, six or eight. In the Civil War, (probably other wars too) there were a lot of wagons conscripted off farms. These were probably pulled by one or two animals. hired freight teams and the teams the Army owned generally were four or larger with six being the most common."
